I personally love Eggbeaters. There are many substitutes out there for foods that I love that I won't touch but egg substitutes are AMAZING. I also am pretty brand specific when it comes to egg substitute though. I have been trying different ones and Eggbeaters beats them all.
So, here is my Eggbeater recipe for omelets. This omelet is crazy filling and pretty huge. I am a big breakfast eater but if you're not I suggest sharing it with a friend! :)
1 c. Eggbeaters
1/4 c. Shredded Monteray Jack cheese
2 oz. diced ham
Pour eggbeaters into a hot skillet, stirring occasionally to heat the eggbeaters evenly. When they become firm take a spatula around the skillet and tip it so the uncooked egg can run under the omelet. Pour the ham and cheese onto one side of the omelet. Let the cheese melt a little bit and fold the other half onto the cheese and ham mixture. Place on plate and enjoy!
*Note* I am terrible at giving directions on making an omelet but hopefully you get the gist of it!*
